I decided to do a second spin in this week's Spin Cycle. I think this might be the most spun Spin Cycle ever, certainly the tastiest. I strongly encourage you to head over to Sprite's Keeper and check out all the great recipes. Jen even has them all neatly labeled so that you can see what they all are before you click on them.
This is another super easy recipe, this time for the crock pot. I got this out of a cook book put together by Nevada homeschoolers. To tell you the truth, it was not something I was going to buy, but I ended up winning it. I went to a meeting hosted by local homeschoolers with a speaker from Reno. She was very interesting, talking about legislation affecting homeschoolers and Nevada laws and things, then she gave away two copies of the cook book, one to the person who had been homeschooling the longest, one to the person who started most recently. I was a shoe-in for the second book. It's ended up becoming our most used cook book, with several recipes that have become favorites.
The recipe originally called for Ritz-type crackers, but I use graham crackers, because that makes more sense to me. The ingredients are:
2 (20 oz) cans pineapple chunks
1 cup brown sugar
3/4 cup graham cracker crumbs
3 tbs. butter or margarine
Dump one can of pineapple into crock pot. (It says to drain it first, but I don't think I ever have.) Cover with half of brown sugar and half of cracker crumbs. Crumble or grate on half of butter. Repeat. Bake on low for 2 hours. Serve warm.
